These little pinwheels are so delicious and amazingly simple to make (especially since I use store bought pie crust)! They don't last long in our kitchen.
I sauté my apples just a bit to give them a head start since these pinwheels bake in a mere 15 minutes. So, I peel and chop a couple of Pink Ladies and sauté them with nutmeg until tender but not too soft.
Preheat oven to 350 and line a baking sheet with parchment paper.
Mix together in a bowl: 1 cup of dried cranberries, 1 cup of walnuts, 1/4 cup of raw sugar (or regular sugar, we just always have raw sugar in our house), and the zest of 1 orange.
On a lightly floured surface roll out the pie crusts into 2 squares. Brush the pie crusts with 2 tablespoons of melted butter.
Spread the apples, and the cranberry walnut filling on top of the pie crusts.
Beat together 1 egg and 2 T water in small bowl and set aside
Roll each pie crust into a log and pinch the edges to seal
Brush each log with the egg mixture.
Carefully cut each log into 10 slices (If you're having issues with slicing the log because the dough is too soft, put it in the freezer for about 10 to 15 minutes before cutting).
Place the slices, cut side up, on the prepared baking sheet, 1 inch apart.
Bake for 12 to 15 minutes, or until golden brown. Place pinwheels on a cooling rack.
Drizzle honey on each pinwheel or sprinkle with raw sugar
Let cool before serving. Enjoy!!
